  9. 2 tbsp hot smoked paprika
  10. 2 tbsp sumac
  11. Salt and pepper
  12. 1 tbsp sugar
  13. 2 peppers diced
  14. Parmesan grated

  1. First of all brown the meat! On a medium heat in a large pan.
  2. Whilst the meat is browning, dice the onions
  3. Then the garlic and add to the pan.
  4. Chop the mushroom and add!
  5. Then the carrots.
  6. Celery.... add
  7. Chop the peppers and add to the pan, stir well!
  8. Next add the tomatoes.
  9. Stir add the wine and stock.
  10. Throw in the spices, add a lid! Turn the hob down to a low simmer! Stir regularly to prevent it from sticking.
  11. After over 1 and a half hours take of the lid and reduce! Taste to check for seasoning!
  12. Let it simmer for as long as possible! Serve!
